Ingredients;
*100g self raising flour
*1/2 tsp bicarbonate of soda
*100g butter
*1 egg
*2 medium bananas
*100g sugar
*2 tbsp full- cream milk
*1/2 tsp vanilla
Optional
*50g raisins
*50g walnuts
Method;
1. Preheat oven to 190 degrees C.
2. Sift flour together b. soda
3. Add in butter and sugar and beat until mixture becomes light and foamy.
4. Add lightly beaten egg and vanilla essence. Mix. Sift in flour. Mix well.
5. Mash bananas LIGHTLY. Do not mash till watery. (jus a little lumpy is alright, the banana will melt)
6. Add in mashed bananas. Mix it well.
7. If loaf, grease tin with butter WELL, and pour in batter. If cupcakes, line cupcake tin with cupcake paper, and fill each one untill 2/3 full.
8. Bake for 25 mins or till golden brown
9. Cool and serve

Queen Cupcakes
Ingredients;
*100g flour
*50g raisins
*75g butter
*75g castor sugar
*1 large egg
*1 level tsp baking powder
*1/2 tsp vanilla essence
*milk to taste
Method;
1. Preheat oven to 190 degrees C.
2. Sift flour and baking powder.
3. Cream butter and sugar till mixture is light and creamy.
4. Lightly beat the egg and add it gradually to mixture. Mix well
5. Add in vanilla essence. Mix. Fold in sifted flour into batter. If stiff and hard to stir, add milk. Add till it has a soft dropping consistency.
6. Mix in rasins.
7. Line cupcake tray with cupcake paper. Fill till 3/4 full for a beautiful outcome.
8. Bake for 25 mins or till golden brown. Cool then serve.

Double Choc Cookies
Ingredients;
*255g butter, softened
*140g castor sugar
*1 egg yolk, lightly beaten
*2 tsp vanilla extract ( essence)
*250g plain flour
*25g cocoa powder
*350g dark chocolate/ chocolate chips ( up to u)
*salt
Method;
1. Preheat oven to 190 degrees/357 F./ Gas mark 5. Line 2 baking sheets with baking parchment.( though i use e more convinent aluminium foil.)
2. Put the butter and sugar into a bowl and mix it well, then beat in the egg yolk and vanilla extract.
3. Sift flour, cocoa & pinch of salt into mixture ( u might wan to sift into a bowl first, then sift again into batter). Add in chopped chocolate or choco chips into mixture and stir till thoroughly combined.
4. Dip a kitchen towel ( the serviette type) into some butter/ margerine. Rub the butter into the baking sheet or al. foil. Scoop about 2 tsp of dough into hand and roll it. Flatten on tray. ( i prefer just scoopin it then dump it on to the tray for a random effect)
5. Space them just enough. The cookies will expand. ( i cannot stress that enough 0_o)
6. Bake for 15 to 20 mins or until brown. Cool on the tray for 5 min before using a palette knife or spatula, transfer to wire rack to cool completely. Serve.

Hey ya'll Jing Yi here. This year im 13 yrs old, and im gonna help my relatives sorta promote :) some recipes. I'll post the recipes frm my family, but im also trying to collect some good recipes too. If all goes according to plan, my aunt and mother wants to open a cafe. :) But it's ONLY a maybe. If all else fails at least I'll hav some great recipes to cook for my family :) gtg c ya
